Mindful Thanksgiving: A Creative and Healthy Take on Your Favorite Dishes

I'll say this over and over again, healthy doesn't mean it won't taste good! You just have to pick the right tasty recipes and that's what I'm here for. Below I will be sharing creative delicious recipes that your family won't even know the difference. Wouldn't it be nice for once to fully indulge in Thanksgiving dishes without feeling the uncomfortable feeling after? Well here you go!

Roasted Brussel Sprouts, Butternut Squash, pecans, and Cranberries



  • 3 cups Brussels sprouts, ends trimmed, yellow leaves removed
  • 3 tablespoons olive oil
  • Salt, to taste
  • 1 and ½ pound butternut squash, peeled, seeded, and cubed into 1-inch cubes (Yields about 4 cups of uncooked cubed butternut squash)
  • 2 tablespoons olive oil
  • 3 tablespoons maple syrup
  • ½ teaspoon ground cinnamon
  • 2 cups pecan halves
  • 1 cup dried cranberries
  • 2-4 tablespoons maple syrup (optional)


Roasted Brussels sprouts:

  1. Preheat oven to 400 F. Lightly grease the foil-lined baking sheet with 1 tablespoon of olive oil.
  2. Make sure Brussels sprouts have trimmed ends and yellow leaves are removed. Then, slice all Brussels sprouts in half. In a medium bowl, combine halved Brussels sprouts, 2 tablespoons of olive oil, salt (to taste), and toss to combine. Place onto a foil-lined baking sheet, cut side down, and roast in the oven at 400 F for about 20-25 minutes. During the last 5-10 minutes of roasting, turn them over for even browning, the cut sides should be nicely and partially charred but not blackened (see my photos).

Roasted butternut squash:

  1. Preheat oven to 400 F. Lightly grease the foil-lined baking sheet with 1 tablespoon of olive oil.
  2. In a medium bowl, combine cubed butternut squash (peeled and seeded),1 tablespoon of olive oil, maple syrup, and cinnamon, and toss to mix.
  3. Place butternut squash in a single layer on the baking sheet. Bake for 20-25 minutes, turning once half-way through baking, until softened.
  4. _Note:_You can roast both Brussels sprouts and butternut squash on 2 separate baking sheets at the same time, on the same rack in the oven – that’s what I did.


  1. In a large bowl, combine roasted Brussels sprouts, roasted butternut squash, pecans, and cranberries, and mix to combine. (OPTIONAL): For more sweetness, add 2 or 4 tablespoons of maple syrup, if desired – do not add all maple syrup at once, start with 2 tablespoons, then add more, if desired, and toss with the salad ingredients to combine. Slow Cooker Garlic Herb Mashed Cauliflower


  1. 1 large head cauliflower
  2. 6 cloves garlic, peeled
  3. 4 tablespoons minced herbs ( I used rosemary, sage, thyme, and parsley)
  4. 1 cup vegetable broth
  5. 4-6 cups water
  6. 3 tablespoons butter or ghee
  7. Salt, to taste


  1. Peel the leaves from the cauliflower and cut into medium florets. Place in your slow cooker and top with garlic cloves, vegetable broth, and enough water to cover the cauliflower.
  2. Cook on low heat for 6 hours or high heat for 3. Drain the water and broth and add the cauliflower back to the slow cooker. Toss in the butter and use an immersion blender or hand blender to mash. Season with salt to your taste and mix in fresh herbs. Set on keep warm until ready to serve.

Apple Cranberry Walnut Salad


  • 6 cups salad (I used a combination of arugula and baby spinach, any spring green mix will do)
  • 1 red apple
  • 1 green apple
  • 1 cup walnuts, roughly chopped (such as Diamond of California)
  • ⅓ cup crumbled feta cheese
  • ⅓ cup dried cranberries


  • 1 cup apple juice
  • 4 tablespoons apple cider vinegar (or white vinegar in a pinch)
  • 2 tablespoons honey
  • scant ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup oil

Pumpkin Pie Cups



  • 1 1/2 cup almond flour
  • 2 tbsp maple syrup
  • 1 tbsp water


  • 1 cup pumpkin puree
  • 1/2 cup baked and mashed sweet potato
  • 1/4 cup maple syrup
  • 1 tsp pumpkin pie spice


  1. Mix together the crust ingredients with a fork until well combined. It should be crumbly but stick together when pressed.
  2. Lightly grease 4 cups of a muffin pan. Place a strip of parchment paper in each for easy removal.
  3. Press the crust into the muffin tins, covering the bottom and sides evenly. Wetting your fingers can help if it is too sticky. Set aside.
  4. Preheat the oven to 375F.
  5. Blend the filing ingredients until smooth and creamy.
  6. Pour into the crusts, and smooth the tops.
  7. Bake for 30 minutes at 375F.
  8. Cool then chill overnight (or at least 8 hours.
  9. Enjoy! Keep in the fridge. thanks feastingonfruit

Grocery shopping for whole30 compliant foods can be tough, but it's also very eye opening. It's given me such perspective on exactly how unhealthy most of our foods are. If you do not know what whole30 is or what whole30 compliant foods are check out my Whole30 Blog! I found that Trader Joes is the best place to shop. It's got some of the widest variety of foods and compared to most health food stores, its budget friendly.

Week 1 Results and Traveling Guide

Well I did it! I made it through my very first week of Whole30. It wasn't easy, but when it comes down to it, it felt very rewarding when the week ended. Check out Vlog #2 where I covered my week 1 results and chatted about surviving my first weekend of traveling on whole30!

I'm Going Back to Basics: Whole 30

My relationship with nutrition has been so positive the past two years. I am proud to say I live by the 80/20 rule (healthy 80% of the time), have cut out most processed foods, and my willpower for junk food has become dominant. But just like anyone else, I have occasional ups and downs in my health and fitness journey. My summer was filled with some more cheats and cocktails than usual. 

Since the summer has passed I have seen a noticeable change in my body, and I'm not talking about weight gain or different fit in my clothing. I'm talking about constant bloating, fatigue, trouble sleeping, and become intolerant to dairies. I have a good feeling these symptoms relate to my nutrition. So I decided it's time to dig deeper and become more aware of how my body reacts to the types of food I'm putting in it! I'm pressing the big giant reset button on my health.

What I get to eat for the next 30 days!

Meat, seafood, eggs, tons of veggies, some fruit, and lots of good fats from fruit, oils, nuts and seeds. I'm going to enjoy foods with very few ingredients, pronounceable ingredients, and foods who don't even have ingredients because they are just that natural!

Foods that I'm kicking to the curb for 30 days!

No added sugar. Artificial or real.  It's empty calories and it's an unhealthy psychological relationship with your food that becomes very hard to break .

No alcohol for me, not even in cooking. yikes. I don't drink alcohol during the week, but it definitely is a social thing with my friends and I. So being surrounded by it and maybe some peer pressure is always difficult. 

No grains. No legumes.

No dairy. I already know I'm intolerant, but also because it is processed and milk does produce a high insulin response in our bodies which can cause inflammation.

Lastly, no recreating baked good, junk food, or treats with approved ingredients. Whether it's with better ingredients, you're still tricking your brain into eating "junk".

Now I know that Shakeology is not Whole 30 compliant, but I have made a personal decision that Shakeology has been too beneficial in my life to remove it from my nutrition. No debating that personal decision of mine please and thank you. 

Why skipping meals will make you GAIN weight

I know I've been guilty of this action before. I ate so much the night before, I'm just going to skip breakfast to make myself feel better. Another one I hear all the time is someone is trying to lose weight so they eat 800 calories worth in 3 meals. Or lastly, that famous excuse, "I don't have time for breakfast". Well sadly you are doing yourself a disservice if you are eating anything less than 5 times a day. On top of being hungry, low energy, and grumpiness, you are really hindering your body.

First off, You are causing your metabolism to slow down. Nobody wants that! Your body is use to working all day long, but when you skip those meals your digestive system isn't able to do its job. Your body will immediately go into starvation mode, latches onto any food you eat, and it becomes very difficult to burn it off. Thus causing weight gain. 

You also put yourself at risk for binge eating and overeating. Raise your hand if you didn't have time to eat all day and then came home for dinner and ate everything in sight. You can also risk overeating when your body is so short on nutrients and calories. You'll sit down at dinner and not know when to stop. Again, causing weight gain. 

To some people eating 5 times a day may seem extreme, but remember these aren't large meals. For best results in weight loss/maintenance you are eating portioned, consistent meals through out the day to keep your metabolism firing. Another huge benefit is noticeable change in increased energy levels. Your body and brain will function exponentially better when you are fueling your body all day long! So make sure to fuel your body and nourish your soul!

Like technology isn’t difficult enough for some of us, it seems that the big dogs such as: shape magazine, food network, or will always control your search engine. But if you’re like me, I’m looking for a trustworthy blogger who’s cooking out of their own kitchen, understands a busy lifestyle, and who has inspiring realistic content.  Well search no more! Are You in a Workout Rut?

We all know working out is good for us, but it can get so dang boring! I’ve totally been a victim of the same routine over and over again. It used to sound like this: 30 minutes on the treadmill, push some weights around, 8 minutes abs , and stretch.  Blah blah blah. So how do you get out of workout rut before you just flat out quit!?!  Here are my tips on how to make sure you stick with you workouts for the long haul!

1.     First off, switch your workouts up! I never felt motivated more than when I did the P90x3 program because it sixteen different workouts.

2.     pump up the jams… jump on that new music!

3.     Surround yourself with inspirational quotes and pep talks. They hit home for me. Thank god for pinterest!

4.     Write down how you feel after each workout!  (I regret that workout… said no one ever)

5.     Plan a post workout meal. Tell yourself you’ll have a yummy shakeology or dinner only after your workout.

6.     Find a workout buddy!

7.     Surround yourself with positive people. Seriously this was a big one for me. Some people may not understand your new lifestyle, that’s fine. But tell them it’s not their life or health.

8.     Get in those steps! If you don’t workout, go on a long walk so you don’t feel guilty later.

9.     What can you accomplish right now. Look at your weekly goal and remind yourself WHY you started this journey in the first place.

10. Set the mood. Get in your cute workout gear and turn on your techno. Lets gooooo!

11. Go shopping to dress the part. I love fitness fashion and it actually makes me want to workout!

3-Day Refresh Review

Personally I have never been one for cleanses. Refreshing my body of toxins has always been appealing, but because I’m such a foodie I couldn’t see myself only drinking juices for 3 days. That’s why when I researched the 3 day refresh, I had to get my hands on it!

First off, the 3-Day Refresh is designed for an individual who wants to get started – or to get back on track – with a fitness and health regimen. The 3-Day Refresh helps restore energy and vitality while erasing toxins and cravings. It is not meant for nor was I using it for weight loss results. During the month of January I had fallen into a rut. I had finished P90x3, but put off starting a new fitness program. I had became bored with my workouts and wasn’t on point with my nutrition like I had prior months. Lastly I had just completed a weekend of partying for two friend's birthdays. Carbs and sugar overload. I needed a refresh button asap! Before I started my new fitness program I decided to wash away the month of January's toxins, and thus I started the 3-day refresh!

What a day looked like:

They make it incredibly easy to follow. Each day you will have: 1 Shakeology, 2 caffeine free teas (optional), 1 Fiber Sweep drink, 2 Vanilla Fresh Shakes, 2 servings of vegetables, 2 servings of fruit, 2 healthy fats, dinner (recipes in book) which include a few servings of vegetables. In addition to that you will also be drinking a ton of water all day! Say what? That’s considered a cleanse? YES it is!!

Day 1:

To be honest day 1 was probably the toughest day for me. I woke up and all I wanted was my usual cup of coffee. Although they don’t recommend it, they say you can have black coffee. But if I was going to do this refresh I vowed to cut coffee out. Almost every review I read online there were complaints on Fiber Sweep, yet I didn’t really mind it because I just chugged it. The fiber sweep does gel up if you let it sit, so drink it fast and you’re done. I really enjoyed the simple dinner recipes. The first thing I noticed when I finished day one was that I never felt deprived or hungry during the day. Although looking at myself physically I was a little worried. I was more bloated than when I started in the morning. Maybe this wasn’t for me?


Day 2:

I was pleasantly surprised to find that my bloating was completely gone. I had lost 2.5 pounds and I didn’t crave coffee! Ok ok maybe I’ll give it ago another two days ;) Day 2 went the same as day 1. Although it was tough watching my boyfriend eat pizza. I craved carbs at the end of the night so I drank caffeine free chamomile tea, which did the job. Again at the end of the day I was back to being bloated, so I’m guessing that’s just how my body reacted to all the extra fiber consumption.

Day 3:

Same results as day 1, my bloating was gone and I had lost 1.5 lbs. Again, I had no struggle through out the day and this time I had no carb cravings at the end of the night!

Final Results and Thoughts:

I lost 4 lbs and 2 inches around my hips. In the picture above (look at the green waistline of my spandex shorts) you can see the refresh decreased my overall bloating. After the weekend filled with carbs and sugars, I was incredibly excited to see that it had eliminated all those toxins that had caused the bloating. Finally, day 4 came and my coffee and sugar cravings have dissipated. The results were HUGE motivators to keep up my nutrition as I entered my new fitness program. If you have found yourself off track or you are just beginning a healthy journey I recommend it as a little boost!

My Meal Plan:

A day in the life of a business owner

 I've done what I was supposed to do as a growing adult. I went to college, got my masters degree, and got a job out of college. For a while I was content with the normal paycheck, 8-5 hours, and weekends off. For most people that’s a dream come true! But for me the one year anniversary of work hit and I already knew that I was falling into complacency. There was no opportunity for promotion. I was going through the motions and ultimately felt unfulfilled. I have a true passion for helping others and am grateful for the opportunities I was given to do that. But I knew there was more for me... I knew I could go farther with my passion.  Thus I quit my job after a year, moved out of the country, and here I am today! Well in all seriousness, the struggle didn’t end there.

I came to a new country with a one year work permit and that was my chance to start fresh. Yet something in me couldn't let go of the fact that I went to school for 7 years to have a career in medicine. How could I not get a job in that?! Even though I was unhappy, I still ended up accepting a medical position because it was safe. I did it to myself again! I worried too much about what my family and others would think of me, that I took a job that I already knew would make me unhappy. Again I spent a solid month crying to my mom of unhappiness. The worst part is, I never spoke a word about it to Dwight. He was working so hard and was so happy in his job I was embarrassed to let him down. Eventually that came crashing down and my mom spilled the beans to Dwight, and I'm thankful for that. Because instead of disappointment, everyone told me to find something that would make ME happy! 

Yes, I am finishing my one year permit with my medical job, but I knew it wouldn't be permanent. The difference is I could finally be ok with pushing the reset button on life! I wanted to continue to help people and make a differenceI needed to find a business that believed in me, that would want me no matter what’s going on in my life, and offered success for the amount of effort I put in. Most of all, I wanted to live my purpose and passion. Right there I signed up to Beachbody, and I have never looked back. It was that simple! Now every Thursday when I get my paycheck I’m wondering why I didn’t I do this sooner! The best part about this journey is that the paychecks don’t mean much, I finally feel like I’m using my purpose, I can only go up, and I’m challenging myself!

Now this is not your traditional job and that's what scares most people. As humans we love staying in our comfort zones (see story above haha). So let me explain Beachbody and what it can possible offer you. This is NOT a get rich quick scheme. It’s hard work and you get out the effort you put in. A lot of people started because they heard "work from home" and quit quickly after because you actually have to work! The difference is after I became a coach, I started to say “WHY NOT ME?” “Why can’t I be successful?”. So I put in the work and guess what…. and I started to see the return. I’m not special and I didn’t just land in the perfect place at the perfect time. My advice to you- just freakin’ do it!! Why not you?!

Being a coach is NOT being a salesperson!! You don't need to sell products to make money. I started my business by sharing my journey on social media. I posted about my workouts, my food, my shakeology, and people online and in person started asking what I was doing. That's how you start a successful BeachBody business. You SHARE your journey and form relationships. If you try to be salesy, I can almost guarantee you will fail. However, if you share your journey and genuinely care about helping other people get healthy then you can do this too!

2016 Fitness Must Haves

Success is the theme for 2016! These are all items that are getting me excited about fitness this year. So I want to share the perfect items that are going to kickstart your fitness journey too! (titles are clickable links)

1.     Kodiak Power Cakes

I’m sure you’ve been down the road of making your own protein pancakes with bananas, protein powders, and eggs. These are WAY better. They have the same fluffiness and are just as filling as are regular pancake. With 14g of protein and 190 calories in 2 pancakes, these are no regular pancake. Found at Target and Costco.

2.  OPTP Black Axis Firm Foam Roller

This professional foam roller gets the job done. I personally own this piece of equipment, and taught my foam rolling classes with it! Why is it better than others? It is high density and is known for being long lasting. It wicks away sweat, where many foam rollers absorb sweat and disintegrate over time. 

3.  Portion Containers

One of the best ways to get started or to get back on track with a fitness and health regimen. You can eat healthy day in and day out, but if you are overeating or undereating on a food source it can totally mess up all your hard work! These color coded portion containers take the guess work out of nutrition! 

4.  Oster Blend-n-go blender

Whether you are headed out the door to work or the gym, making your shake or smoothie won’t slow you down. With the all in one bottle feature, there’s no extra dishes to wash. I mean it’s a win-win! All you do is screw the blade onto the bottle, blend, and then switch the blade with the lid. Bam! You’re done!

5.  Kitchen Supreme Spiralizer

Bubye pasta carbs, hello zoodles (zucchini noodles). This one has changed the nutrition game for me. I have a serious weakness for pasta and this gadget has saved the day. It creates zucchini noodles that look and taste EXACTLY like real noodles.

6.  Nike Sports bras

This is one category you just don’t want to go cheap in. Nike does an incredible job designing a highly supportive and fashionable sports bra! They create different types of sportsbras for an assortment of body types.

Simple tips on controlling your sugar cravings

Sugar is an addiction! So when you begin to cut it out of your new lifestyle you can actually have withdrawals, otherwise known as cravings. How can sugar possibly become an addiction? well when you consume sugar it spikes your insulin and then later your blood sugar drops so low you begin to crave it again. It's an ugly cycle, but can be fixed when you cut regularly cut it out of your diet. Here are some quick and simple tips on surviving those mean cravings:

3 Levels of Planks

If I could pick one exercise to do the rest of my life, it would be Planks! They engage the ENTIRE body ranging from your glutes, abs, and even shoulders! I can't explain enough on how importance it is to have core strength. Having a strong gives you better balance in daily life, and can prohibit you from having a lot of different injuries.

P90X3 Review

At the end of this month I can proudly say I will be finished with the P90x3 program! WOW! Honestly I want to thank you all, without you I'm not sure I would have followed through to the end. I publicly stated on facebook, instagram, and my website that I was beginning this journey... can you say PRESSURE? Knowing that all of you have been watching and seeing my daily posts was holding me accountable to my word. After that move, there was no way I could quit! I would also like to say thank you to my challengers the past few months. No one is as inspiring as you folks! I expected a lot from you, and I'm glad you did the same for me. We struggled together, we grew together, we failed together, and we succeeded together!

So onto my review. P90x3 was created to deliver extreme results in 90 days, and oh man did it deliver! I was a chronic elliptical/treadmill user, so I had majorly plateaued. But I also considered myself to still be in pretty good shape. After the first two days I was sore in places that I didn't even know were possible. P90x3 is set up that you repeat 6 routines for 3 weeks, so it was really incredible to hit week 3  and do the same moves that I had done in week 1. The strength that I had built in just a matter of 2 weeks was insane! week 1 I was falling on my face with a lot of the moves, and week 3 I had become a completely different person who had core strength, balance, and endurance. 

My body was also physically changing. I've always struggled with weight gain in my love handles, and in my hips . No matter the minutes on my treadmill, those areas weren't changing. By week 5 I had finally lost inches around my hips and no more muffin top in my jeans!

Being an athletic trainer and an injury prevention specialist my favorite part about P90x3 was Tony being very adamant about doing the movements CORRECTLY. In a lot of exercise classes and other lifting sports, instructors tend to choose what I like to say "quantity over quality" sometimes it becomes the act of speed or weight instead of the importance of doing the exercise correctly. Because Tony made sure I was firing my glutes correctly instead of overusing my quads, I was finally seeing toning in areas I had never seen before. 

Overall if you are looking for extreme results and are ready to push yourself really hard, this program is for you. But you need to be in the mindset of being consistent, having the willingness to work really hard for 30 minutes, and ready to commit to a new lifestyle!!

Make 2016 YOUR YEAR. I have big goals and I’m sure you do too! Whether it is personal development, health, confidence, nutrition, or time management, my boot camps encompass the WHOLE person and not just reaching for the physical outcomes.

During the holidays we tend to put things that are important to us on the back burner. But now that the Christmas season is over, we have no excuses to hide behind. There is never a right time or a right place, so it’s time for you to step up to the plate and put yourself first! I know it can be really scary! You’ve tried before… and you’ve failed before, but in my boot camps I have seen more people succeed than fail! So what makes this time different?

I am going to ask you your WHY, and I will remind you every single week why you started this journey. I’m going to hold you accountable each and every day. You will most likely give me excuses and I will find you solutions. You will be asked to participate and interact with people who are going through the same exact thing. You will make long lasting friendships and accountability partners who will be by your side the entire way. There will be days where you WILL fail, but you will brush yourself off and move forward. You will find success because you are following my nutrition plan.  Your mind and soul will find new clarity on life. Lastly, You will find your force and you will be unstoppable!
